Activists in New York City have been fighting to address the city’s sewage problem, which spills out into the surrounding waterways every time it rains.   • This recipe I’m about to share, you have to promise to make this week, okay? Promise. Because it will be one of the best things you have ever eaten and it’s so simple to make. I’m always looking for new recipes, especially if they’re plant-based, and I came across Nasim’s Peanut Miso Chickpea Salad and decided to make it since I had most of the ingredients already on hand. Let me first say that I’m not a huge sandwich person, but I love chickpeas. I had leftover challah bread from last week’s French toast so I decided to give the peanut miso chickpea salad a shot and I’m SO glad that I did. Let me know if you love it as much as I do.
